I finally decided it was worth losing a little aroma from grinding the beans and loading the filter the night before in order to have coffee at the touch of a button when I’m sleepy.
I like pourover, but I also don’t like super hot coffee, so I make mine before bed and vacuum seal it in a mason jar. Then I either have “iced coffee” in the morning or I give it a quick reheat to an immediately drinkable temp. With the vacuum, I don’t really get a discernable taste difference by the time I wake up.
