It has a very safe taste. Feels like it’s connected to mac n cheese (but it has potatoes). Apparently they often serve it with apple compote, which works ok, but I like it better without

This looks good! Never had it with bacon, always with ham instead, but bacon does sound good as well.

    Some personal tips:

    • Don’t skimp on the cheese (!!)
    • Warm up some milk, add the cheese and season with nutmeg
    • You don’t just have to cook the onions but actually make something called “Zwiebelschwitze”. Fry the onions with plenty of butter until they are golden, but not too dark
    • In addition, it’s also nice to add some fried onions (“Röstzwiebeln”, can be bought like a spice)
    • Then mix the milk and cheese sauce with the potatoes and magronen (pasta) in a large gratin dish and season with salt and pepper
    • Cover the gratin dish with the onions and more cheese and put it in the oven for a few minutes to create a nice crust

Ah, you’re right. I was unsure if there were different names, but now I know: I used elbow macaroni instead of normal macaroni/maccheroni

Like, when the majority of the taste is salt and umami, and there are few spices or “risky” flavours. Tasting safe is being inoffensive and accessible, but less exciting
