        it’s never not been healthy, but ancel keys in the 1950s did a bang up job of blaming fat for the problems of glucose spiking foods - creating lots of confusion.

        we have talked about this extensively.

        though the best read is just - https://doi.org/10.1016/j.jacc.2020.05.077 - Saturated Fats and Health: A Reassessment and Proposal for Food-Based Recommendations: JACC State-of-the-Art Review

        Whole-fat dairy, unprocessed meat, and dark chocolate are SFA-rich foods with a complex matrix that are not associated with increased risk of CVD. The totality of available evidence does not support further limiting the intake of such foods.

          Oh aye, I’m fully aware that sugars are what gets immediately stored by the body, did a stint of keto back in the day (and I’m not american so was never indoctrinated by the “its got 0% fat” advertisaganda.)

            Animal fat is tremendously healthy, because it’s what our bodies need for things like making hormones, myelin sheathes, etc. It’s required for the body to function!

            Our livers can make a little cholesterol, but the rest of it we must get from our diet, and we can only get it from animals.
